Zucchini Bread




I wanted to post this recipe a when I fist started getting zucchini from my garden, but then remote learning started at home and next thing I knew, my youngest was using my computer full time during the day and then when school was over, I was just exhausted!

But, I'm here now and I think that you will really love this recipe. It's very easy to make and, in my own opinion, is better than banana bread!

Ingredients:

3 eggs
2 cups sugar
1 cup veggie oil
2 cups shredded zucchini (drained)

3 tsp vanilla
1 tsp cinnamon
1 tsp nutmeg
3 cups flour
1 tsp baking soda
1 cups walnuts (optional)

Instructions:

  • Preheat oven to 350.
  • In a mixing bowl, add eggs, sugar, veggie oil, zucchini, and vanilla.
  • In a separate bowl, add all the dry ingredients and mix. Pour into bowl of wet ingredients and mix.
  • Split batter into 2 different bread loaf pans and bake for 35-40 minutes or until done. 

Conclusion

The hardest part of making this bread is shredding the zucchini. When you don't have the right tools, it can be tiring, so I recommend getting some sort of veggie shredder to make it easier for you. Otherwise, this bread is very easy to make and I have never had it go wrong.
